Thanksgiving Food - Not your mother’s recipes

The turkey went from freezer to refrigerator last Thursday in an effort to make sure it is thawed for cooking. Here’s the calculations:
28 pound bird X 4 hours per pound for thawing = 112 hours for thawing which makes a bit over 4.5 days. Here’s reality: It always takes longer! OK, so the turkey is thawing. If you do not have your turkey thawing yet, you better get with it; nobody likes a cold bird for Thanksgiving. Now I have to get the list together for the rest of the food. I’ll be using that for my post today. And of course I’ll be including the recipes most of which are old favorites.

for Cranberry Citrus Relish:

  • 1 navel orange
  • 1 lemon
  • 1 lime
  • check sugar
  • fresh cranberries
  • check Grand Marnier - the alcohol cooks out and leaves a great taste

For Cornbread Dressing:
Real Southern Cornbread -

  • check cornmeal
  • check all-purpose flour
  • check salt
  • check baking powder
  • check sugar (we use non-refined, organic)
  • eggs
  • unsalted butter (we use non-dairy, unsalted margarine)
  • buttermilk

Southern Herbed Dressing -

  • check Southern-Style Corn Bread, see above
  • check white bread - I always have this around
  • check unsalted butter
  • 2 medium onions
  • 2 medium celery ribs
  • check chicken (turkey) stock or canned low-sodium broth
  • check large eggs
  • flat-leaf parsley
  • fresh sage
  • check minced thyme
  • check salt
  • check fresh pepper

Roasted Mini Pumpkins - this is a favorite and we don’t consider it Thanksgiving unless we have these. Forget the turkey, it’s all about these:

  • 12 mini pumpkins - need three more
  • check cinnamon
  • check fresh nutmeg
  • check allspice
  • check unsalted butter
  • check pure maple syrup
  • check salt
  • check fresh pepper

Not Your Mother’s Green Bean Casserole - I’m doubling

  • 2 pounds fresh green beans
  • 16 ounces mushrooms
  • check unsalted butter
  • fresh garlic
  • check Kosher salt
  • check fresh pepper
  • check flour
  • check chicken stock
  • dry sherry
  • 1.5 cups 1/2 & 1/2
  • check 1 slice good whole grain bread ((I’ll use my regular white bread))
  • 1 can French fried onions

We can’t forget dessert can we?
Southern Pecan Pie (right off the bottle of Karo, although I don’t use Karo anymore because of the HFCS)

  • check eggs
  • check Karo Light or Dark Corn Pure Cane Syrup
  • check sugar
  • corn oil margarine
  • check vanilla
  • check salt
  • check pecans
  • 1 - 9 inch unbaked pastry shell

Spicy Pumpkin Pie

  • 1 - 30 ounce can of solid-packed pumpkin (or 2-15 ounce cans of solid-packed pumpkin)
  • check pumpkin pie spice
  • check salt
  • check eggs
  • check 2 - 12 ounce cans evaporated milk
  • check 2 pie crusts

  4. Ann - yes, mouth-watering.

    Chef - Actually, I am so much the real-butter-and-only-real-butter as a person can be, but CowBoy is very allergic to dairy. And so when there is a menu that has lots of butter/milk stuff I cut where I can. I will actually be using the Smart Balance Organic when possible. He does seem to be outgrowing some of his reactions, but he has trouble with the absorption as well as the fact that he looks like a leper when he gets too much. He drinks Rice milk and when we have ice cream he gets Rice Dream Ice Cream. I just substitute here and there and it often changes from one day to the next. I cook with as much butter as I think each day’s diet can handle.

    Misty - I can’t wait to dig in. I begin the preps this evening.

  5. Looks like Thankgiving here will be a bust. Si is barfing, Scary’s stomach hurts, and I have a sore throat. Is that how you spell throat? I do not want to go to Tupelo and stay in a hotel while sick. But then, I really don’t want to be sick.

Holley - you know we got this new big table, load up that big one of your’s on P’s truck and will set it up next to ours and lock the barfers up in the bathroom and eat this huge bird - I really don’t want to eat turkey for the next year. 28 pounds! The den has hide-a-bed and lots of room for sleeping bags and inflatable mattresses. We could quarantine a bedroom for sickies.
