How to make pancakes - really, really, good ones

Just a little FYI post for the BloP. I decided to write this up after my 4:03am post in which I referred to my 2 year old son’s love of pan-takes.

3 Cups of Baking Mix Substitute
3 Tbls of oil
3 eggs
3 Cups of buttermilk

Mix the liquid ingredients together and add to the Baking Mix. (I keep lots of Baking Mix Substitute made up in my pantry ready to use at the drop of a hat.)
Mix well and let rest wile you heat your griddle or pan. We use our Rival Electric Skillet or our really large cast iron pan. I set our skillet to 400F (that’s the highest setting for our model).

We make small (almost Silver Dollar size) pancakes because the children just think it’s “more funner” that way. I can fit eight pancakes on my electric skillet. Even though it is a non-stick surface, I always butter it - YUM. I use a 1/4 measuring cup to pour my batter. Now, once you pour your batter onto your skillet LEAVE IT ALONE until the edges are starting to get bubbly and a little dry looking. Then, and only then, do you flip them. Nevah, evah, nevah, nevah, evah (got it?) flip them a second time! If your pancakes are too dark after the flip you need to lower your temperature setting (or use less butter and not let it brown first). Remember that stove tops eyes and thermostats of cooking products can vary slightly. But . . .

This is the way to make the bestest pancakes ever!
